We tried out something new for our supper last night as we had a "what's in the fridge" tapas night. The tomatoes were great and I thought I'd share it with you. They work well on their own with a selection of cheese and a sallad but would be awesome with a roast or steak. You can't fail with this dish!
Preheat the oven to 180 C. Put Cherry tomatoes ( leave the stem/leaves as that makes it prettier) in a roasting tin. Pour over 1/2 tablespoon of olive oil and a 3/4 tablespoon of balsamic vinegar. Crush 2 unpeeled cloves of garlic and put in the roasting tin. Toss it around a bit so that the tomatoes are covered in the 'sauce'. Put the dish in the oven and leave for 15 minutes (approx.) until the skin of the tomatoes starts to burst and the kitchen is full of the lovely summery smell of warm tomatoes.
Serve with whatever you feel like and drink lots of nice red wine with it!

Correct me if I'm wrong, but aren't you the same person I got to know a number of years ago who were/is allergic to tomatoes??? Am I remembering it all wrong?
Nope, I am still allergic but sometimes you'll just have to suck it up and take the bad with the good...
